I completed my cross-country tour by making my way to the Fairmont Hotel Vancouver, where I stayed in a large suite newly refurbished in a palette of deep blues and soft grays. At breakfast, I gorged on the house-candied Pacific salmon and miniature donuts and fresh raspberries, every one of them perfect. By day, I indulged in superb sushi and shopped the local designers on hip Main Street. And for dinner, I headed over to Botanist, a new restaurant at the Fairmont Pacific Rim hotel. The interiors are gauzy and elegant, full of massive green plants, and the whole place feels like a breath of fresh air. After a specialty drink crafted in Canada’s only “cocktail lab,” I moved over to the dining room for a tasting menu that included unbelievably tender grilled octopus served with shaved asparagus and a fabulously creamy five-mushroom tagliatelle with hints of lemon and a crispy Parmesan wafer.
