/ 19 Best Restaurants in Vancouver

When it comes to dining, this relatively small West Coast city punches well above its weight class.

Located in the busy Fairmont Pacific Rim Hotel, this stellar restaurant is a relatively new addition to Vancouver’s culinary scene. Botanist describes itself as “inspired by the principles of botany.” For starters, the foie gras torchon, served with caramelized apple, savory waffle, and bacon syrup, is astonishing; the tagliatelle, with foraged mushroom, mushroom soil, and crispy piave cheese, is also on point. Botanist is a great choice for any occasion, but it’s best for celebrations. Go with like-minded friends, dress yourselves in Lagerfeld black, and pretend—for one evening, at least—that money is no object.”
