“Botanist, the name of the bar and dining space, has been hailed a success, the bar No.9 on the list of Canada’s top 50 bars this year and the adjoining restaurant ranked 39 of 100 restaurants nationally. An alternative name for Botanist’s bar could have been Alchemist. All manner of mixology is magicked up in an open-front cocktail lab, where bartenders intently construct elaborate drinks based on the elements of earth, wind, fire and air.”
